MD009 – Deep Fried Turkey
Tired of the same old Thanksgiving traditions? Heat things up a bit this year with a 30-quart pot of boiling oil! Deep frying your turkey is a delicious alternative to the usual oven method, but make sure you don’t accidentally deep fry your clothing, hands, or pets in the process. don’t ever fry a turkey on concrete. If the oil spills over and catches on fire it will run downhill. Find a flat grassy surface. Check out the Good Eats episode where Alton fries a turkey, probably the safest method out there.

Really lite on the safety stuff about fried turkey. Here are things I keep in mind. I tend to use peanut oil rather than canola oil as it heats at a higher temp w/ out burning. Also, the a major danger is if you have your oil up to temp and you drop your turkey in and there is too much oil, it boils out of the top, hits the propane burner flame and then it is 911 time. To get the level correct, I put the bird in the pot, and fill the pot with water, so the bird is just covered. Pull the bird out, and mark with a small piece of tape the level of the water. That will be the amount of oil you will need. You will have to dry everything, the pot, the bird (inside and out) by pat drying with paper towels before you start. I tend to do this step with a frozen turkey as part of the thawing process. I agree with the folks that said no concrete pad (or asphalt driveway for that matter), and the fire extinguisher. I like to wear a heavy cooking apron to keep any splatter off my clothes. One more tip – you will end up with a couple of gallons of used oil to deal with after it cools. You might want to have a plan for oil disposal before you take this on. You can re-use the oil, but realistically how often do you fry a bird. By the time the next time rolls around, my “used” oil has gone rancid.

Did you know turkey is bad for dogs? A little bit is ok but it can be very harmful. It is hard for them to digest. Good episode though Veronica. We miss you at Cnet!
